What's For Dinner - Slow Cooker Chicken Bacon Ranch

Today's edition of What's for Dinner features Slow Cooker Chicken Bacon Ranch Recipe by Six Sister's Stuff. This is one of my new favorites!!! If you search "Slow Cooker Chicken Bacon Ranch" on Pinterest, it's one of the top search results.

I made it over the weekend and doubled the recipe since we had more than 6 people eating. It's extremely simple to make and the best part is, you mix it all up, put it in the slow cooker and leave it!

Here's the ingredients you'll need:

  • 2 pounds boneless skinless chicken breasts (thawed)
  • 8 oz cream cheese
  • 8 oz Philadelphia cream cheese with bacon
  • 2 oz dry ranch dressing mix (2 packets)
  • 10 oz bacon, cooked and broken into pieces
  • 1 1/2 cups shredded Colby Jack Cheese (I used cheddar)
  • 6 rolls or buns (I just used regular hamburger buns)
Instructions:

  1. Lightly spray your slow cooker with non stick cooking spray. Place chicken in the slow cooker.
  2. In a medium sized bowl (large bowl if you are doubling) combine the cream cheese, bacon cream cheese, ranch dressing mix and cooked bacon pieces. Spread this over the chicken in the slow cooker.
  3. Cook on low for about 6-8 hours or on high for about 4 hours. Watch closely so they don't over cook. (I have made this and used both the low and high setting, both work nicely)
  4. Shred the chicken using 2 forks and stir together well in the slow cooker so chicken is coated well.
  5. Serve chicken on rolls and top with shredded cheese. Stick under broiler just until cheese is melted. Watch closely - it only takes about 45 seconds. -- I didn't put mine under a broiler or microwave it, I just let the cheese melt on it's own.
We served with green beans, cottage cheese and potatoes. 



It's so simple and so yummy!! I will warn you, it is rich in flavor so I wouldn't serve it with a side that has a lot of seasonings. Keep it simple.
